Open and unroll the pie crust on a lightly floured cutting board or counter top. Roll out into a large rectangle. Using a ravioli cutter, cut into 6 strips- then cut each strip into 3 equal pieces
1 pkg refrigerated pie crust
Working on one pop tart at a time, add roughly a tablespoon of jam to a pastry square. Spread it out evenly, careful to leave a clean edge of pastry on all sides, then run a wet finger around the clean edge of pastry on all sides. Lay another pastry square overtop, and use your fingers to press the edges down and together.
1/2 cup strawberry jam, 2 tbsp water
Using the tines of a fork, press down along all edges of the pop tart to seal. Press the fork into the top of the pop tart several times to create holes for steam to escape. Repeat until all the pop tarts have been made.
Lightly spray the basket of an air fryer with non stick cooking spray. Add a couple pop tarts to the basket, but don't overcrowd the basket. Cook at 350° for 8 minutes, or until golden brown and the dough's cooked through. Repeat in batches until all the pop tarts are done. Transfer cooked pop tarts to a wire rack to cool completely.
Add the remaining ingredients to a small bowl, and whisk together until evenly combined. Top each pop tart with glaze, followed by sprinkles.
1 cup powdered sugar, 2 tbsp milk, 1 tsp vanilla extract, rainbow sprinkles
