Pat the chicken pieces dry with a paper towel. Liberally salt & pepper, and set aside.
In a large mixing bowl, add the milk and hot sauce. Whisk them together until evenly combined.
Add the prepared chicken to the bowl, pressing them down so all the chicken is under the liquid. Cover the bowl with a loose dish towel, and let the chicken marinate for 20-30 minutes.
To a large ziplocking bag add both the flour and old bay seasonings. Without spilling, use your hands to squish the contents together until the seasoning's mixed in with the flour.
Working with one piece of chicken at a time, use tongs to place a piece of chicken into the bag. Carefully shake to evenly coat the chicken.
Using a separate pair of tongs, remove the coated chicken from the seasoning bag and transfer it to a large piece of parchment paper.
Repeat until all the chicken is coated and on the parchment paper.
Lightly spray the basket of your air fryer with non stick cooking spray. Spritz the chicken lightly with cooking spray too.
Transfer the chicken to the basket of your air fryer, so that it's side by side but not overlapping. This may mean you need to cook it into batches if you have a smaller air fryer.
Cook the chicken at 390 degrees for 25-28 minutes, or until an internal temp thermometer reads 165°
