Ingredients

  • 6 slices bacon chopped
  • 3 eggs at room temperature
  • salt & pepper to taste
  • 1/2 cup granulated sugar
  • 1/2 cup distilled vinegar
  • 3/4 cup water

Instructions

  • Cook the bacon in a skillet over medium heat, stirring often, until crispy. Using a slotted spoon, transfer to a paper towel lined plate to drain. Set aside the skillet, leaving the bacon drippings in it.
    6 slices bacon
  • Add the eggs, salt, pepper, and sugar to a mixing bowl, whisking together until evenly combined. Add both the vinegar and water to the egg mixture, again whisking together to evenly combine. Pour this mixture into the skillet with the bacon drippings. Add the cooked bacon to the skillet, then stir together until completely incorporated.
3 eggs, salt & pepper, 1/2 cup granulated sugar, 1/2 cup distilled vinegar, 3/4 cup water
  • Set the skillet over medium heat, stirring often, until it comes to a boil- immediately reduce the heat to a simmer. Simmer gently until the dressing has thickened to your liking.
  • Let cool significantly, then serve warm over salad greens.

Notes

  • Once the dressing is simmering, give it a careful taste to check for seasoning and season it with salt and pepper to your liking.
  • Stir vigorously when you are heating the egg mixture with the bacon bits and grease. If you don't you'll have bits of egg throughout the dressing.
  • You could add a clove or two of garlic for even more flavor.
