Lucky Charms Pancakes

Lucky Charms pancakes are a magically delicious breakfast treat for St. Patrick's Day. Pancake mix gets dressed up with the festive cereal, white chocolate, and sprinkles for the holiday!

Ingredients

  • 2 cups pancake mix Krusteaz brand recommended
  • 1 1/3 cups water
  • 1 - 1 1/2 cups Lucky Charms cereal
  • 2 tbsp butter
  • white chocolate melts optional
  • sprinkles optional

Instructions

  • Add the pancake mix and water to a mixing bowl, and whisk them together just until evenly combined. Do NOT overmix.

  • Add the cereal to the bowl, stirring just until evenly incorporated.

  • Add 1 tablespoon of butter to a skillet set over medium low heat and melt. Pour 1/3 cup of batter onto the hot buttered skillet. Cook until bubbles start to appear on the surface.

  • Using a nonstick spatula carefully, and quickly, flip the pancake over. Continue cooking for about 2 more minutes- just until the pancake's cooked through and the bottom's slightly golden brown. Transfer to a waiting plate.
  • Continue cooking until all the pancakes are cooked, adding the remaining butter to the skillet halfway through.
  • If using, melt the chocolate according to the package directions. Pour over the stack of pancakes, then top with sprinkles.

  • Serve warm & enjoy!

Notes

  • Don't overmix the pancake batter! It will not be completely smooth and that is totally fine!
  • Not sure if your skillet is hot enough? After the butter melts, add a drop or two of water to the skillet. If the water dances and sizzles, the skillet is hot enough.
  • Make sure to add the last pat of butter halfway through cooking!
