Easy Strawberry Cream Cheese

Easy strawberry cream cheese is a quick way to upgrade any breakfast or brunch occasion. Sweetened fresh berries and creamy spread combine to make the ultimate in treats to smear on your bagels or toast in the morning.

Ingredients

  • 1 lb fresh strawberries washed & hulled
  • 1 tbsp granulated sugar
  • 2 8 oz blocks cream cheese softened

Instructions

  • Add the prepared strawberries to a strainer basket, sprinkle the sugar evenly out overtop, and let them rest for 15-20 minutes.
  • Transfer the sweated fruit to a mixing bowl, and mash them slightly.
  • Add the softened cream cheese to another mixing bowl, and using a hand mixer whip until smooth & creamy.
  • Add the mashed berries to the cream cheese, and mix in- just until incorporated.
  • Refrigerate the mixture for 30 minutes before serving to allow the flavors to meld.

Notes

  • If you want even more strawberry flavor you can mix in 1-2 teaspoons of strawberry extract.
  • For a strawberry cheesecake flavor, add 1-2 teaspoons of vanilla extract.
  • If you prefer a mixture without fruit pieces, set a bowl under the strainer. Instead of adding the strawberry pieces, mix in the collected juice.
  • You can use frozen strawberries to make this but you'll want to make sure they're thawed completely, otherwise the cream cheese will be too thin from the excess moisture.
