- 28 oz frozen meatballs thawed
- 1/3 cup minced white onion
- pinch red pepper flakes
- 2 1/2 cup marinara sauce
- 1/3 cup chiffonade basil leaves divided
- pinch garlic powder
- 1 1/2 cups shredded mozzarella cheese
Add the meatballs to a large skillet, cooking and stirring just until lightly browned on the outside. Transfer them to a waiting plate.
Add the onion and red pepper flakes to the skillet. Cook, stirring often, just until softened- about 3-4 minutes.
Add the marinara sauce, basil, and garlic to the skillet, stirring until everything's evenly combined.
Bring the sauce to a simmer, and reduce heat to low and let it cook, stirring often, just until slightly thickened.
Add the meatballs back to the skillet and let them simmer in the sauce just until heated through.
Sprinkle the cheese evenly out overtop of the skillet, then broil just until the cheese has melted.
- Make sure to use an oven safe skillet. I prefer a cast iron skillet, so you don't have to switch dishes in between the stove top and broiling.
- You could up the veggie factor by adding diced red or green bell peppers to the sauce as well.
- Watch the skillet carefully while it broils. The cheese can go from perfectly melted and golden brown on top to burnt in seconds.
