Ingredients

  • 28 oz frozen meatballs thawed
  • 1/3 cup minced white onion
  • pinch red pepper flakes
  • 2 1/2 cup marinara sauce
  • 1/3 cup chiffonade basil leaves divided
  • pinch garlic powder
  • 1 1/2 cups shredded mozzarella cheese

Instructions

  • Add the meatballs to a large skillet, cooking and stirring just until lightly browned on the outside. Transfer them to a waiting plate.
  • Add the onion and red pepper flakes to the skillet. Cook, stirring often, just until softened- about 3-4 minutes.
  • Add the marinara sauce, basil, and garlic to the skillet, stirring until everything's evenly combined.
  • Bring the sauce to a simmer, and reduce heat to low and let it cook, stirring often, just until slightly thickened.
  • Add the meatballs back to the skillet and let them simmer in the sauce just until heated through.
  • Sprinkle the cheese evenly out overtop of the skillet, then broil just until the cheese has melted.

Notes

  • Make sure to use an oven safe skillet. I prefer a cast iron skillet, so you don't have to switch dishes in between the stove top and broiling.
  • You could up the veggie factor by adding diced red or green bell peppers to the sauce as well.
  • Watch the skillet carefully while it broils. The cheese can go from perfectly melted and golden brown on top to burnt in seconds.
