Crispy Air Fryer Potato Wedges
Crispy air fryer potato wedges are a delicious side dish for anything that pairs well with thick french fries or roasted potatoes. With a crisp, crunchy exterior and a pillowy interior, this recipe creates a restaurant style wedge right at home.

- 4 medium russet potatoes washed & scrubbed
- 3 tbsp extra virgin olive oil
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- pinch cayenne pepper optional
- 1 tsp salt
- 1/2 tsp pepper
Cut your potatoes into wedges, then add them to a large mixing bowl.
Add cold water to the bowl, just until the potatoes are covered. Add 2 cups of ice to the bowl, then let the potatoes sit/soak for 30 minutes. Drain the potatoes and pat them completely dry with paper towels.
Transfer the potato wedges to a large, dry mixing bowl. Drizzle the olive oil evenly out over them and gently toss to coat. Sprinkle the seasonings out over the potatoes, and again toss just until evenly coated.
Spray the basket of a large air fryer with nonstick cooking spray. Add the potatoes in a single layer- but don't overcrowd.
Air fry the potato wedges at 400° for 15-20 minutes, shaking the basket halfway through.
Serve the crisped potato wedges warm with your favorite dipping options.
- Depending on the size of your air fryer basket, you may need to cook in two batches. You want a single layer and no overlapping fries.
- We like to serve our potato wedges with a sprinkle of parmesan cheese, dried parsley, and dried oregano.
- If you don't want the wedges to have a kick at all, omit the cayenne.
