Crispy Air Fryer Potato Wedges

Crispy air fryer potato wedges are a delicious side dish for anything that pairs well with thick french fries or roasted potatoes. With a crisp, crunchy exterior and a pillowy interior, this recipe creates a restaurant style wedge right at home.

Ingredients

  • 4 medium russet potatoes washed & scrubbed
  • 3 tbsp extra virgin olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • pinch cayenne pepper optional
  • 1 tsp salt
  • 1/2 tsp pepper

Instructions

  • Cut your potatoes into wedges, then add them to a large mixing bowl.
  • Add cold water to the bowl, just until the potatoes are covered. Add 2 cups of ice to the bowl, then let the potatoes sit/soak for 30 minutes. Drain the potatoes and pat them completely dry with paper towels.
  • Transfer the potato wedges to a large, dry mixing bowl. Drizzle the olive oil evenly out over them and gently toss to coat. Sprinkle the seasonings out over the potatoes, and again toss just until evenly coated.
  • Spray the basket of a large air fryer with nonstick cooking spray. Add the potatoes in a single layer- but don't overcrowd.
  • Air fry the potato wedges at 400° for 15-20 minutes, shaking the basket halfway through.
  • Serve the crisped potato wedges warm with your favorite dipping options.

Notes

  • Depending on the size of your air fryer basket, you may need to cook in two batches. You want a single layer and no overlapping fries.
  • We like to serve our potato wedges with a sprinkle of parmesan cheese, dried parsley, and dried oregano.
  • If you don't want the wedges to have a kick at all, omit the cayenne.
