Ingredients

  • 2 small/medium pumpkin pies
  • 1/2 cup crushed pecans optional
  • melting chocolate
  • crushed glazed pecans or sprinkles for garnish

Instructions

  • Add the whole pie to a large mixing bowl. Discard the pie tin.
  • Using a potato mashed, roughly crush and break up the pies until they've reached an even consistency.
  • Fold in 1/2 cup of crushed pecans, if using, just until evenly incorporated.
  • Using a medium sized cookie scoop, transfer scoops of the pumpkin pie mixture to a parchment paper lined baking sheet. Continue until all the pumpkin mixture's been used.
  • Transfer the baking sheet to a freezer, laying it flat, and let the balls freeze for 30-45 minutes.
  • Melt the chocolate according to the package instructions.
  • Remove the truffles from the freezer, and add one to the melted chocolate turning to coat. Using a fork, remove the chocolate coated truffle from the chocolate and let any excess chocolate drip off. Transfer the truffle to a clean sheet of parchment paper.
  • Sprinkle the truffle with garnish, and then continue until all the truffles have been coated and garnished.
  • Let the chocolate cool completely, then serve.

Notes

  • If you're having trouble keeping your melted chocolate soft and smooth while working with the truffles, you can next the bowl of chocolate in a bowl of hot water.
  • Sprinkle your garnish immediately on each chocolate coated truffle as soon as you transfer it to the parchment paper. The chocolate begins to harden quickly and the window for getting the garnish to stick is small.
  • Can't find melting chocolate? Use chocolate chips with a tablespoon of coconut oil stirred into it after you melt it.
