Easy Focaccia Bread Using Frozen Rolls

Ingredients

  • 24 count frozen Rhodes dinner rolls
  • 1/2 cup + 2 tbsp extra virgin olive oil divided
  • dried herbs
  • garlic powder
  • sea salt

Instructions

  • Add 2 tablespoons of olive oil to a 9x13 inch baking dish. Using a pastry brush, paint it all over the bottom and insides of the dish.
  • Add the 24 frozen dough balls to the dish, spaced out as evenly as possible.
  • Cover the dish with cling wrap, making sure to seal it to keep air out. Let the rolls sit until completely risen.
  • Uncover the risen rolls, and drizzle the remaining half cup of olive oil evenly out over the rolls.
  • I recommend using the handle of a wooden spoon, but you could also use your fingertips, press the dough down into the dish. This should create little divets or pockets in the 'punched down' dough. Do this evenly out over the whole dish.
  • Season the dough evenly with the remaining ingredients.
  • Bake at 350° for 25 minutes, or until golden brown and cooked through.
  • Serve warm and enjoy!

Notes

  • We 'over' proofed our dough, meaning let it rise far more than we would've if we were making dinner rolls. The dough was well above the rim of the baking dish by 1/4-1/2".
  • Don't spread the cling wrap too tightly, you want to allow some room for the dough to rise.
  • You can use whatever herbs you enjoy, fresh or dried. We used a blend of rosemary and oregano but thyme, basil, or parsley would all be good choices.
