Ingredients

  • 2 ripe peaches
  • 1 tbsp canola oil
  • 1 1/2 tbsp brown sugar
  • 2 cups vanilla ice cream

Instructions

  • Heat grill to medium high heat. Brush the peach halves with a touch of oil, sprinkle each half with a pinch of brown sugar, and place them on the grill for a few moments and then rotate 90 degrees and continue to cook for about 3-4 minutes, grill marks will be present and the peaches will feel softer.
  • Remove from the grill with a pair of tongs and serve with a generous scoop of your favorite brand of vanilla ice cream in the center of each peach.

Notes

  • Want to add even more flavor? Add a sprinkle of cinnamon.
  • The brown sugar is optional so if you are watching your sugar or just trying to eat a little healthier you can skip it and the peaches will still taste great.
  • For a lighter dessert, you could substitute vanilla or even plain yogurt for the ice cream.
