Ingredients

  • 6-8 frozen chicken tenders
  • ¾ cup mayo
  • ¼ cup honey
  • 1 tablespoon dijon mustard
  • 1 teaspoon sesame oil
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 2 heads romaine lettuce washed and chopped (about 8-10 cups)
  • 1 cup purple cabbage thinly sliced
  • 1 cup shredded carrots
  • cup dried chow mein noodles
  • ¼ cup slivered almonds

Instructions

  • Prepare chicken tenders according to package directions
  • While chicken tenders are cooking, make the dressing by stirring together the mayo, honey, dijon mustard, sesame oil, salt, and pepper until well combined; set aside in fridge until ready to use
  • In a large salad bowl, mix together the lettuce, cabbage and carrots, then top with chow mein noodles, almonds
  • Once chicken tenders are finished cooking, cut into bite sized pieces and add to salad
  • Toss with dressing and serve immediately

Notes

  • Feel free to sub out the romaine for other lettuce if desired. Crunchier lettuces like iceberg work better than softer greens.
  • For extra flavor, you could toss a drained can of mandarin oranges into this salad. The restaurant version includes this.
  • Add a little heat to the dressing with a touch of sriracha.
