Puppy Chow Truffles

- 2 ½ cups plain rice chex cereal
- ¾ cup peanut butter
- ⅓ cup powdered sugar
- 1 teaspoon vanilla
- 1 cup chocolate chips
- 1 tablespoon shortening
- ½ cup powdered sugar
Add chex to a food processor and pulse until small pieces
Add peanut butter, powdered sugar and vanilla and process until a paste forms
Chill in fridge for at least 30 minutes
Roll into 12 equal balls, then return to the fridge while you make the chocolate coating
Melt the chocolate chips and shortening in a small pan on lowest heat setting until smooth
Use a toothpick to dip each the 12 truffles in the chocolate, then allow to chill until chocolate is hardened (about 10-15 minutes)
Roll each truffle in powdered sugar and enjoy
