Spinach Salad

Spinach salad is an easy, elegant starter that's absolutely packed with flavor. Our version of these classic greens includes crumbled bacon and slivered almonds for flavor and crunch. A delicious bacon vinaigrette finishes this mouthwatering salad.

Ingredients

For The Dressing

  • 1/2 cup extra virgin olive oil
  • 2 tbsp white vinegar
  • 1/4 tsp dried tarragon
  • 1/2 tsp salt
  • 1/4 tsp freshly cracked black pepper
  • 1/4 tsp dry mustard powder
  • 2 tbsp bacon drippings
  • 2 cloves garlic minced

For The Salad

  • 6-8 cups fresh baby spinach washed & dried
  • 3/4-1 cup crisp, crumbled bacon
  • 1/2 cup slivered almonds

Instructions

  • Add all of the dressing ingredients to a blender, and blend until smooth.
  • Cover the dressing, and place it in the fridge to chill for 15 minutes.
  • Add the spinach to a large mixing bowl. Whisk the dressing vigorously to mix up to re-combine, and then pour it over the spinach.
  • Using a pair of tongs, gently toss until all the spinach is evenly coated in the vinaigrette-style dressing. The salad is ready to serve, and should be served within 5 minutes.
  • Just before serving, add the bacon and almonds. Toss gently to combine, and serve.
