Brown Sugar Roasted Pineapples

Brown sugar roasted pineapples are a sweet, tangy side dish. Loaded with brown sugar and crunchy pecans, this fruit recipe is a flavor and texture explosion. Your family will beg you to make these baked pineapples over and over again!

Ingredients

  • 5 cups chopped pineapple or one large pineapple cored and chopped
  • 1/2 cup chopped pecans
  • 1/4 cup pineapple juice
  • 1/4 cup packed brown sugar
  • 1/4 cup salted butter melted
  • 1/8 cup flour
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt

Instructions

  • Lightly spray a 9x13" baking dish with non stick cooking spray. Spread the pineapple chunks out evenly in a single layer. Pour the pineapple juice out over top of the pineapples.
  • In a small mixing bowl add the sugar, flour, cinnamon, and salt. Whisk together until evenly combined. Sprinkle the seasoned flour mixture evenly out over the pineapples. Gently toss them to coat.
  • Spoon the melted butter evenly out over top of the pineapples.
  • Bake the pineapples at 450 degrees for 30 minutes, stirring every 10 minutes, until the pineapples are golden and caramelized with the brown sugar.
  • Remove the pineapples from the oven, and let them rest for 5 minutes.
  • Serve and enjoy!
