Brown Sugar Roasted Pineapples

- 5 cups chopped pineapple or one large pineapple cored and chopped
- 1/2 cup chopped pecans
- 1/4 cup pineapple juice
- 1/4 cup packed brown sugar
- 1/4 cup salted butter melted
- 1/8 cup flour
- 1/2 tsp ground cinnamon
- 1/4 tsp salt
Lightly spray a 9x13" baking dish with non stick cooking spray. Spread the pineapple chunks out evenly in a single layer. Pour the pineapple juice out over top of the pineapples.
In a small mixing bowl add the sugar, flour, cinnamon, and salt. Whisk together until evenly combined. Sprinkle the seasoned flour mixture evenly out over the pineapples. Gently toss them to coat.
Spoon the melted butter evenly out over top of the pineapples.
Bake the pineapples at 450 degrees for 30 minutes, stirring every 10 minutes, until the pineapples are golden and caramelized with the brown sugar.
Remove the pineapples from the oven, and let them rest for 5 minutes.
