Dijon Mustard Glazed Baked Salmon

- 4-6 1/4 lb salmon fillets
- 4 tbsp. chopped fresh parsley
- 1/4 cup Dijon mustard
- 3 tsp. lemon juice
- 1 tbsp. vegetable oil
- 3 cloves garlic minced
- salt and pepper to taste
Preheat oven to 375F and line a baking pan with parchment paper.
Place salmon on the pan and set aside.
In a small bowl, combine parsley, Dijon mustard, lemon juice, vegetable oil, minced garlic, and salt and pepper to taste and mix together.
Coat the top of each salmon fillet with the mixture and bake for 20 minutes.
