Homemade Caesar Salad Dressing (Without Anchovies)

A creamy Caesar salad dressing can be made at home much more easily than you'd think, and without any of that fishy business. Whip up a batch whenever the mood strikes with this easy recipe.

Ingredients

  • 3 tsp minced garlic
  • 3/4-1 cup mayonnaise
  • 1 tsp dijon mustard
  • 1/2 tsp dry mustard
  • 2 1/2-3 tbsp red wine vinegar
  • 2 tsp Worcestershire sauce
  • 3/4 cup freshly grated Parmesan cheese
  • salt and pepper to taste
  • 1/4 cup extra virgin olive oil

Instructions

  • Add all of the ingredients to a food processor or blender, and blend until completely incorporated.
  • Slowly add in a little bit at a time, while continuing to blend, 1/4 cup of olive oil. Blend until the dressing has emulsified.
  • Refrigerate until chilled, so that the dressing thickens, and continue to refrigerate any leftovers for up to a week.

Notes

  • Adjust the garlic to suit your tastes.
  • Remember to use good quality ingredients- especially olive oil. Since the dressing relies on the oil for flavor, you don't want to skimp on it.
  • You will know the dressing is ready to go in the fridge when it all comes together and has a uniform consistency.
