Homemade Caesar Salad Dressing (Without Anchovies)
A creamy Caesar salad dressing can be made at home much more easily than you'd think, and without any of that fishy business. Whip up a batch whenever the mood strikes with this easy recipe.

- 3 tsp minced garlic
- 3/4-1 cup mayonnaise
- 1 tsp dijon mustard
- 1/2 tsp dry mustard
- 2 1/2-3 tbsp red wine vinegar
- 2 tsp Worcestershire sauce
- 3/4 cup freshly grated Parmesan cheese
- salt and pepper to taste
- 1/4 cup extra virgin olive oil
Add all of the ingredients to a food processor or blender, and blend until completely incorporated.
Slowly add in a little bit at a time, while continuing to blend, 1/4 cup of olive oil. Blend until the dressing has emulsified.
Refrigerate until chilled, so that the dressing thickens, and continue to refrigerate any leftovers for up to a week.
- Adjust the garlic to suit your tastes.
- Remember to use good quality ingredients- especially olive oil. Since the dressing relies on the oil for flavor, you don't want to skimp on it.
- You will know the dressing is ready to go in the fridge when it all comes together and has a uniform consistency.
