- 2 sleeves of saltine crackers
- 1 cup water
- 1 large egg
- 2 tablespoons melted butter
- 1 teaspoon vanilla extract
- ½ teaspoon cinnamon
In a large bowl, crush the two sleeves of crackers and add the water, stir and allow the crackers to absorb the water (about 2 minutes)
Stir until the crackers and water become a paste (some chunks are okay)
Mix in the egg, melted butter, vanilla extract and cinnamon; mixture will be quite thick
Heat a lightly greased nonstick pan over medium heat, add a scoop of the batter and flatten into a pancake shape
Allow to cook until the bottom starts to turn a golden brown, about 4 minutes, then flip and cook the other side until golden brown as well
Repeat until all the batter has been used ( you will get 8 cakes)
Serve warm with fruit and syrup if desired
- We like this dish served and topped like a pancake, but you can switch up the flavors.
- Want to make it more interesting? Top it with fresh fruit or even raisins.
- For a savory version, leave out the vanilla extract and cinnamon. You could replace those flavors with garlic and pepper or even a little cheese if you prefer.
