Saltine Cracker Cakes

Saltine cracker cakes turn plain old soda crackers into sweet, pancake like fritters. This vintage recipe will wow you with its comforting goodness and save you if you are ever in a pinch.

Ingredients

  • 2 sleeves of saltine crackers
  • 1 cup water
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • ½ teaspoon cinnamon

Instructions

  • In a large bowl, crush the two sleeves of crackers and add the water, stir and allow the crackers to absorb the water (about 2 minutes)
  • Stir until the crackers and water become a paste (some chunks are okay)
  • Mix in the egg, melted butter, vanilla extract and cinnamon; mixture will be quite thick
  • Heat a lightly greased nonstick pan over medium heat, add a scoop of the batter and flatten into a pancake shape
  • Allow to cook until the bottom starts to turn a golden brown, about 4 minutes, then flip and cook the other side until golden brown as well
  • Repeat until all the batter has been used ( you will get 8 cakes)
  • Serve warm with fruit and syrup if desired

Notes

  • We like this dish served and topped like a pancake, but you can switch up the flavors.
  • Want to make it more interesting? Top it with fresh fruit or even raisins.
  • For a savory version, leave out the vanilla extract and cinnamon. You could replace those flavors with garlic and pepper or even a little cheese if you prefer.
