Instant Pot Pumpkin Spice Latte

- 2 cups milk
- 2 cups heavy cream
- 1/3 cup sugar more or less to taste
- 8 oz. brewed coffee or espresso
- 4 tbsp pumpkin puree NOT pumpkin pie filling
- ½ tsp pumpkin pie spice
- 1-2 cinnamon sticks
- 2 tsp pure vanilla extract
- Optional: whipped cream and ground cinnamon for topping
Place the milk and cream in the instant pot and turn on the “sauté” mode.
When the milk mixture is warm (you should see little bubbles forming), add in sugar and whisk until the sugar is completely melted and combined.
Add in coffee/espresso and pumpkin puree and whisk to combine.
Add in the pumpkin pie spice and cinnamon sticks and whisk until the spices are incorporated.
Turn off the sauté mode and place the lid on the Instant Pot and set on high pressure for 5 minutes. Allow the pot to naturally release for 5 minutes then manually release the remaining pressure.
Add in the vanilla extract and give one final mix.
Divide between 4 cups and top with whipped cream and ground cinnamon! Enjoy!
