Spray a 9x13" baking dish with nonstick spray. Set aside.
To a large skillet set over medium heat, add the ground beef and onion soup mix packets. Cook, breaking up the meat and stirring as it does, until the ground beef is crumbled and browned throughout. Strain off ALL excess grease.
Open one of the tubes of dough, unroll it, and lay it flat in the bottom of the prepared baking dish. Press the seams together to seal, and gently press the crescent roll dough out to cover the entire bottom of the dish.
Add the ground beef to the dish, spreading it out in an even layer that covers the crescent roll dough.
Top the ground beef with cheese slices, and sprinkle the chopped pickles evenly out over top.
Open the remaining can of dough, unroll it, and lay it flat over the center top of the dish. Pinch the seams together, and gently stretch out as needed to cover the entire dish.
Bake the casserole at 350° for 15-20 minutes, or until the cheese has melted and the crescent roll crust is a nice golden brown.
Carefully remove the casserole from the oven, and let it rest for 5-10 minutes.
Using a sharp knife cut into 9 squares and serve with your favorite condiments.
