Ingredients

  • 2 8 oz packages cream cheese softened
  • 1/2 cup salted butter softened
  • 1/3 cup sundried tomatoes (packed in oil) diced & patted dry with a paper towel
  • 1 1/2 tsp Italian seasoning
  • 2 cups shredded mozzarella cheese
  • 2 cups crushed blue corn tortilla chips
  • 2 green pepper rings sliced into 1" pieces

Instructions

  • To a large mixing bowl, add all of the ingredients EXCEPT the crushed chips sliced green peppers. Using a hand mixer, whip them together until evenly combined.
  • Cover the mixing bowl tightly with cling wrap, and refrigerate for 2 hours.
  • Separate the cream cheese mixture, into 1/4 and 3/4's.
  • Roll the 1/4 of cream cheese mixture into a ball. Flatten it out between a sheet of wax or parchment paper into a wide disk shape for the brim of the hat.
  • Add the cream cheese disk to the crushed chips, pressing them in as necessary to cover/stick, and then set it on your desired serving platter. This should be where you intend for it to stay and finish building the cheese ball.
  • Cover the serving platter in cling wrap, and set aside.
  • Form the remaining 3/4's of the cream cheese mixture into a fat log shape. Wrap it in plastic wrap to seal, and refrigerate both for another hour.
  • Unwrap the serving tray, set aside.
  • While the larger log is still wrapped, roughly smush/shape it into a form that resembles the top half of a witches hat. Carefully unwrap, and roll it in crushed chips- pressing them in as needed to ensure even coverage.
  • Flatten the bottom, as needed, and set it on top of the center of the brim.
  • Using the green pepper slices, add them around the base of the hate cone to form a hat band that also hides where they meat.
  • Serve immediately with dipping options of your choosing.
