Ingredients

  • 2 cups lemon juice fresh pressed, if possible
  • 2 cups sugar

For Serving

  • 6 cups water
  • 2 cups ice

Instructions

  • If using fresh pressed lemon juice, make sure to strain it to remove any seeds or pulp. You can do this directly over your instant pot straight into the liner. Discard seeds/pulp.
  • If using bottled juice, shake it well to combine then measure out and add the two cups to the liner of the pot.
  • Add the sugar, and stir until the juice and sugar are evenly combined.
  • Add the lid, set the vent valve to the closed setting, and pressure cook for 1 minute.
  • Once the timer beeps, immediately perform a quick release- carefully opening the valve to release the steam but avoiding the hot steam.
  • Stir the thickened syrup.
  • To a large pitcher add the ice and water. Pour in the syrup, stirring and tasting as you go, until the desired sweetness is reached. You may not use all the syrup, or you may, whatever your preference is ok!
  • Adjust the water or lemony syrup as needed.
  • Serve immediately & enjoy!
