Braised Celery

Wondering what to do with an extra celery? Need a new side dish option? This savory braised celery recipe is just the thing you've been looking for. It's quick and easy, and the result is tender celery that tastes like it's soaked up all the flavors of a soup pot with only 10 minutes work. Get your bunch of celery out of the crisper drawer, and turn it into the star side dish for your next big meal!

Ingredients

  • 12-14 stalks celery
  • 2 tbsp butter
  • salt & pepper to taste
  • 3/4 cup chicken broth

Instructions

  • Wash the celery thoroughly, making sure to rid it of any dirt or debris. Remove any leaves, and then cut the dried ends of both sides of each stalk.
  • Cut the celery into roughly 1" pieces.
  • In a large skillet (that has a lid), melt the butter over medium heat.
  • Add the celery, tossing with the butter to coat. Season with salt & pepper, to taste. Reduce the heat slightly, and sauté the celery for 5 full minutes.
  • Pour in the chicken broth, and let it reach a simmer. Once it comes to a simmer, cover, and cook for another 5 minutes.
  • Remove the lid and then cook for a final 3 minutes, stirring occasionally- so that the remaining liquid evaporates.
  • Serve the celery warm.

Notes

  • This is a great way to use up excess celery, or even celery that's pretty much on it's last leg. If your celery is on the softer side because it's older, then you'll want to drastically lower the cooking time. You want it tender, but not mushy.
  • Don't like chicken broth, or prefer a vegetarian option? Substitute vegetable broth instead.
  • Want to give this simple side dish a little gourmet flair? Add in a splash of white wine and some thyme when cooking.
  • Diced onions are also a yummy addition to the celery for extra flavoring. Add them when you begin sauteing.
