Onion Crusted Herbed Chicken Breasts

- 4-5 chicken breasts trimmed of fat
- 1 container French fried onions crushed
- 1/4 tsp ground mustard
- 1/2 tsp garlic powder
- 1/4 tsp ground black pepper
- 3 tbsp chopped fresh parsley
- 2 large eggs beaten
- 4 tbsp butter melted
Add the crushed fried onions to a mixing bow. Add the seasonings & parsley, and whisk together until evenly combined.
Pour the onion mixture out onto a waiting plate, and set aside. Lightly grease a 9x13" baking dish, and set aside.
Dip a chicken breast in the beaten eggs, gently shaking off any excess. Transfer the chicken to the coating mixture, turning to coat evenly. If needed, gently press the coating into the chicken to be sure it adheres.
Transfer the prepared piece of chicken to the waiting baking dish. Repeat until all the breasts have been coated and are in the dish.
Drizzle the melted butter evenly out over the chicken.
Bake the chicken at 350 degrees for 20 minutes. Remove the baking dish, and carefully flip the chicken trying not to dislodge any of the crispy onion coating.
Bake the chicken for another 10-15 minutes, or until the chicken's cooked through and the coating is golden brown and crispy.
