Ingredients

  • 1 pound ground beef
  • 1 large yellow onion chopped
  • 6 large Russet potatoes cubed
  • 1 cup beef stock
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • Ketchup optional

Instructions

  • Add ground beef and chopped onion to the inner pot of the Instant Pot. Cook on saute mode until beef has browned.
  • Add in the potatoes and remaining ingredients. Stir to combine.
  • Put the lid on the Instant Pot, with the pressure valve turned to sealing.
  • Set cooking time for a manual high pressure time of 4 minutes, allowing for a quick pressure release when the time has finished.

Notes

  • Go for lean ground beef so you don't need to worry about draining the excess fat.
  • Cut the potatoes into similarly sized pieces so they cook evenly.
  • Serve with ketchup if desired.
