{One Pot Wonder} Chicken Lo Mein
A simplified version of a Chinese take out favorite, this chicken lo mein recipe cooks all in the same pot for a truly flavorful, veggie-filled pasta dinner.

- 1 lb boneless skinless chicken breast, cut into chunks
- 1 lb spaghetti or lo mein noodles
- 4 medium carrots peeled and cut into 3 inch long strips
- 1 medium red bell pepper cut in thin 3 inch long strips
- 1 bunch green onions white part thinly sliced and the green part cut into 3 inch long strips
- 4 tsp garlic minced
- 1/4 cup soy sauce
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1 tsp corn starch
- 1 tbsp sugar
- 1/2 tsp crushed red pepper flakes
- 4 1/2 cups chicken broth
- 2 tsp extra virgin olive oil
Add the chicken, then the pasta, then the remaining ingredients to a large stockpot or dutch oven, and cover. Bring to a boil. Stir and reduce to a simmer.
Cook covered for about 15 minutes, stirring occasionally. Cook until most of the liquid is gone and the chicken is cooked through.
Remove the lid, let the lo mein rest for 5 minutes before scooping and serving.
