Ingredients

For The Pasta Salad

  • 1 lb farfalle pasta
  • 2 cups chopped rotisserie chicken
  • 2 cups diced ham
  • 2 cups diced Swiss cheese cubes
  • 1 cup broccoli florets
  • 3/4 cup frozen peas thawed
  • 1/3 cup matchstick carrots

For The Dressing

  • 1/4 cup honey
  • 1 1/2 cups mayo
  • 2 tbsp Dijon mustard
  • 2 tbsp white vinegar
  • 1/2 cup olive oil
  • 1/4 cup sugar
  • 1/2 tsp garlic powder
  • pinch onion powder
  • 2 tbsp chopped fresh parsley leaves for serving, optional
  • shredded Parmesan cheese for serving, optional

Instructions

To Make The Pasta Salad

  • Cook the pasta according to the package directions. When 'al dente' transfer the pasta to a colander in the sink and run it under cold water, until cooled, to stop the cooking process.
  • Transfer the cooled, cooked pasta to a large mixing bowl.
  • To the mixing bowl, add the remaining salad ingredients. Gently toss until evenly combined. Set aside.

To Make The Dressing

  • In a medium mixing bowl combine all of the remaining ingredients EXCEPT the garnishes.
  • Whisk together until smooth & creamy.
  • Pour the dressing over the pasta salad, and stir together until evenly combined.
  • Serve & enjoy!

Notes

  • This recipe is easy to half or double for smaller or bigger groups.
  • You could omit the sugar and use more honey in the dressing.
  • Chop the broccoli florets fairly small so you have little tiny pieces of broccoli throughout instead of tougher big stalks of it.
