Cheesy Pineapple Casserole

Cheesy pineapple casserole is a sweet and savory side dish that knocks it out of the park! It pairs well with ham so it is ideal for holidays like Easter, Christmas, or even Thanksgiving.

Ingredients

  • 1 cup sugar granulated (white)
  • 1 cup flour
  • 1 20 oz can pineapple chunks drained
  • 1 20 oz can crushed pineapple UNdrained
  • 1 1/3 cup shredded cheddar cheese
  • 1 sleeve Ritz crackers crushed
  • 2 tbsp butter melted

Instructions

  • Add both the sugar & flour to a large mixing bowl. Whisk together to evenly combine.
  • Add the pineapple and 1 cup of cheese to the bowl, and stir again just until everything's evenly combined.
  • Lightly grease an 8x8" OR 9x9" baking dish with non stick cooking spray, and then transfer the cheese & pineapple mixture to the prepared dish. Use a spatula to spread it out into an even layer.
  • Sprinkle the remaining cheese evenly out overtop of the dish.
  • To another mixing bowl, add both the crushed crackers & melted butter. Stir together until evenly combined. Spread the buttered cracker crumbs evenly out over the casserole.
  • Bake the casserole at 350° for 20 minutes, or until bubbling and the crackers are golden brown.
  • Serve warm & enjoy!

Notes

  • I like to crush my crackers in the sleeve before I ever even open it as it saves me dishes, but if you prefer to 'see' the results then add the crackers to a large ziplocking bag before lightly crushing with a rolling pin or the flat side of a meat mallet. 
  • Watch the cracker crumbs while cooking, especially as it approaches the end of the cooking time. The buttered crackers can go from golden brown to burnt quickly if left unattended.
  • Make sure to drain the pineapple chunks so it isn't too soupy.
  • If you don't want it as sweet, you can reduce the amount of sugar.
