Oreo Cheesecake Brownies

Ingredients

For The Brownies

  • 1/2 cup all-purpose flour
  • 2 tablespoons cocoa powder
  • 2 eggs room temperature
  • 1 teaspoon vanilla extract
  • 3/4 cup granulated sugar
  • 1/2 cup unsalted butter
  • 7 oz semi-sweet chocolate chips
  • 1/2 teaspoon salt
  • 16 Oreos cookies

For The Cheesecake Layer

  • 12 oz cream cheese room temperature
  • 1 egg room temperature
  • 1/2 teaspoon vanilla extract
  • 1/4 cup granulated sugar
  • 6 Oreo cookies crushed

Instructions

  • Preheat oven to 350°F. Line a 9-inch square pan with aluminum foil or parchment paper. Set aside.
  • In a large microwave-safe bowl, melt the chocolate and butter until smooth. Heat in 20-30 second intervals, stirring after each one. Let cool slightly.
  • In a medium bowl, combine the flour, cocoa powder, and salt.
  • Add sugar into the melted chocolate, whisk until combined. Add in eggs and vanilla. Whisk until combined.
  • Fold dry ingredients into the chocolate mixture. Gently mix until smooth.
  • For the cheesecake layer, beat the cream cheese until fluffy. Add in the sugar, egg, and vanilla. Whisk until smooth.
  • Pour the brownie batter into the prepared pan, smooth the top. Arrange Oreo cookies, gently press into the batter. Spread the cheesecake mixture all over the top. Sprinkle with crushed cookies.
  • Bake for 35-40 minutes until edges are slightly golden. Cool on a wire rack. Refrigerate for at least 1 hour before serving.

Notes

  • Make sure to melt the chocolate and butter for the brownie layer in increments to prevent burning the chocolate. If you burn the chocolate, you will need to discard it and start over.
  • Don't overmix the brownie batter when you stir in the dry ingredients. Overmixing could create a tough brownie.
  • You could vary your cookies in this recipe and do half Oreos, half chocolate chips. Whatever you like!
