Guacamole Filled Folded Quesadillas

Ingredients

  • ½ red onion
  • 2 ripe avocados
  • 4 large-sized tortillas
  • ½ cup cooked black beans
  • 1 ½ cup mozzarella cheese
  • 2 to matoes
  • ¼ tsp salt
  • 2 tbsp butter

Sour Cream

  • ¼ cup sour cream
  • 1 tbsp lime juice
  • ¼ tsp salt
  • 2 tbsp chopped fresh parsley or cilantro

Instructions

  • Begin by chopping the tomatoes and onion into small pieces. Then mash the avocado and add salt to it.
  • To make this Tik Tok trick, you’ll need to cut the tortilla from its centre to one edge. This cut allows you to flip one side over the other. The result will be a layered triangle.
  • Once you cut it, you’ll have four quarters. In two of them, on opposite sides, put some cheese. Add some tomato over one side and some onion to the other.
  • Spoon some mashed avocado in the triangles that remain empty and place some black beans over.
  • Flip one triangle over the next one clockwise.
  • Finally, add some butter to a skillet and once melted, cook each quesadilla from both sides.
  • For the sour cream, chopped parsley or cilantro and mix it with sour cream and lime juice.
  • Enjoy immediately with some sour cream on top!

Notes

  • With this recipe, you can be creative with your filling. As is, the recipe has raw onion to achieve the classic guacamole taste but you can cook the onion first for a milder flavor.
  • You can add other ingredients too. Make it veggie loaded with sautéed onion, bell pepper, carrots and zucchini. For a meatier quesadilla, you could stuff them with pulled chicken like this salsa chicken or even beef.
  • When you are choosing your avocadoes, go for ripe ones. They should feel firm with a slight give to them without being mushy. If you pull the little nub off the avocado, you should see light green and not brown.
