Turkey Dijon Melt Sandwiches

Turkey dijon melts are a delicious way to use up leftover turkey in a grilled cheese sandwich. Perfect for a quick and easy lunch and dinner that you will love!

Ingredients

  • 4 slices sandwich bread
  • 2 tbsp mayo
  • 1/4 lb thinly sliced turkey
  • 2 thick slices monterrey jack cheese
  • 1/4 cup thinly sliced red onion
  • salt & pepper to taste
  • 1 tbsp honey Dijon mustard
  • 1 tbsp butter softened

Instructions

  • Spread the mayonnaise evenly out on the insides of two slices of sandwich bread.
  • Dividing the ingredients between the two, layer the prepared bread with turkey, cheese, and onion. Season them with salt & pepper.
  • Spread the honey mustard evenly onto the insides of the last two slices of bread, and top the sandwiches with them.
  • Spread the butter onto the outsides of the sandwiches.
  • In a large skillet, over medium low heat, toast the sandwiches until the bread's golden brown and the cheese has begun to melt. Carefully flip them, keeping them together, and toast the other sides until they're also golden brown and the cheese has fully melted.

Notes

  • It helps to have the butter softened to room temperature.
  • Use two spatulas when flipping the grilled cheese style sandwiches to make sure everything stays in place. If you don’t press them together a bit, the filling can leak or fall out of the bread!
  • If the bread is toasting faster than the cheese is melting, cover the skillet with a lid. The heat will build up and start melting the cheese faster.
  • Use a large skillet or griddle pan to toast both sandwiches at the same time. This saves some cook time. If you do use a smaller skillet, it will be hotter with the second sandwich. This means the second sandwich will cook faster, so you’ll need to adjust cooking times to prevent burning.
  • Use these sandwiches to use up leftover turkey during the holidays or sub-out chicken after a Sunday night chicken dinner.
