Sweet Potato Casserole Bites

All the flavors you love about a classic sweet potato casserole have been turned into the perfect bite sized finger food with these 'bites'. Perfect for any holiday occasion, they make great additions to brunch, lunch, or dinner as either appetizers or side dish- even dessert!

Ingredients

  • 3-4 medium sweet potatoes peeled
  • 2 tbsp butter melted
  • 1 tsp maple syrup
  • large marshmallows
  • pecan halves
  • salt to taste

Instructions

  • Slice the peeled sweet potatoes into 1/4" thick coins. Add the sliced potatoes to a waiting mixing bowl.
  • Drizzle the melted butter & maple syrup out over top of the sliced potatoes. Gently toss to evenly coat the sliced potatoes.
  • Line a large baking sheet with parchment paper, and place each sliced sweetened potato onto it. Spread them out evenly.
  • Bake the sweetened potato rounds at 400 degrees for 10 minutes. Flip each potato, and bake them for an additional 10 minutes. Remove them from the oven.
  • Top each sweet potato slice with a marshmallow.
  • Return the pan to the oven, under the broiler setting, and watching constantly until the marshmallows have 'puffed'.
  • Remove the sweet potato bites from the oven, and top each one with a pecan halve.
  • Let them rest for 1-2 minutes before serving.
