Apple Cider Baked Beans

Slightly sweet, these savory baked beans use apple cider to make a wonderfully tasty saucy side dish for Fall that's studded with chunks of salty ham.

Ingredients

  • 2 cups dried navy beans wished, picked through, and soaked overnight
  • 1 white onion diced
  • 4 tbsp molasses
  • 4 tsp Dijon mustard
  • 2 tbsp ketchup
  • salt & pepper to taste
  • 2 tsp dried thyme
  • 1 tsp apple cider vinegar
  • 4 tsp soy sauce
  • 1-2 ham hocks
  • 2 cups apple cider brought to a boil

Instructions

  • Add beans to the bowl of your slow cooker.
  • Add all of the remaining ingredients, stirring gently to combine.
  • If the liquid doesn't quite cover the beans, add more boiling water- just enough until it does.
  • Cover the slow cooker with it's lid, and cook on low heat for 6-8 hours.
  • Stir, and remove any bones and the bay leaf. Serve immediately.

Notes

Don't have any ham bones handy? You can sub in several strips of thick cut bacon. You could also add in regular diced ham if wanted. It's just about getting the meat in some form in there to infuse the beans with the flavor.
