Chicken Rice Pilaf Casserole

Chicken rice pilaf casserole is the perfect quick, easy recipe for a weeknight meal! With only 5 ingredients, this family friendly cheesy chicken rice casserole is the best way to get a meal on the table without any crazy effort.

Ingredients

  • 2 1/2- 3 cups chopped rotisserie chicken
  • 2 boxes rice pilaf Rice A Roni
  • 1 can cream of chicken soup
  • 1 can chicken flavored gravy
  • 2 cups shredded cheddar cheese

Instructions

  • Spread the chicken evenly out into a 9x13 inch baking dish. Set aside.
    2 1/2- 3 cups chopped rotisserie chicken
  • Cook the boxes of rice a roni together, according to the package directions- stirring occasionally.  Remove the skillet from heat when the rice has cooked 3/4's of the way through, and there's still broth left in with it.
    2 boxes rice pilaf Rice A Roni
  • Spoon the rice mixture evenly out over top of the chicken, spreading as necessary for an even layer.
  • In a small mixing bowl, whisk together the cream of soup and the gravy until evenly combined. Pour & spread this evenly out over the rice layer.
    1 can cream of chicken soup, 1 can chicken flavored gravy
  • Sprinkle the cheese evenly out over top.
    2 cups shredded cheddar cheese
  • Bake the casserole at 350 degrees for 25-30 minutes, or until hot and bubbly and the cheese has begun to form a golden brown crust.
  • Remove the dish from the oven, and let it rest for 2-3 minutes before serving so it can 'set'.

Notes

  • Make sure you don't fully cook the Rice A Roni. It will finish cooking in the oven and you want some of the rice broth in the casserole dish.
  • Want to add some veggies into this? Add a couple cups of chopped steamed broccoli or even frozen peas into the mix to get some green in.
  • Don't skip the resting time. The casserole needs a chance to set before you scoop it out into individual portions.
