An easy meatloaf with a simple ingredient list, this Stove Top Stuffing Mix Meatloaf is the perfect dinner for busy nights. Served with creamy mashed potatoes and rich gravy, your family will never guess your secret to such a cozy meal.
I’m not a habitual ‘crazy couponer’, as my husband lovingly calls me during my binges. From time to time though? This Mama likes to save money as much as the next person.
Bonus points when it’s on something I have to buy anyway, like food to feed my hungry, hungry hippos (aka boys).
I also have developed this inherent sense for knowing when things will be on sale.
It may seem like common sense to some, but it took me years to hone my skill of knowing when seasonal items (and particularly what items) would be going on sale.
I know now that in the weeks leading up to Thanksgiving, usually about two weeks before things like cranberry sauce and stuffing get marked down- drastically. Best sales of the year!
When we first got married, I might’ve bought a box or two- I mean it was on sale after all. That’d be it though.
Since then, I’ve learned that stuffing isn’t just something you stuff your roaster with– it has soooooo many more yummy uses. Thank God for that revelation!
Nowadays, I reeeeeaaaaaalllllllyyyyyy stock up when the stuffing goes on sale.
Which is a really good thing, because it’s the secret ingredient to my family’s favorite weeknight meatloaf- Stove Top Stuffing Mix Meatloaf.
It’s not Grandma’s meatloaf, that takes me some time to get together and has a lengthier list of ingredients. So it’s more of a weekend, special occasion recipe.
With this, I can set my beef to thaw in the fridge before work, come home, and in about 10 minutes have this bad boy in the oven.
A genius hack, cooking meatloaf in a bundt pan reduces the amount of cook time a traditional meatloaf requires. It also gives it a beautifully crisp exterior. And who doesn’t love the crispy bits of a meatloaf?!
Perfectly seasoned, tender, every bite is perfection. Serve it with mashed potatoes & gravy on the side, or go for the ultimate presentation by ‘filling’ it with the potatoes, and liberally drizzling it with thick, rich brown gravy.
This is budget-friendly comfort food, like Mama made, but revised for today’s busy schedule.

- 1 pkg Stove Top Stuffing Mix, any flavor
- 1 cup hot water
- 1 1/2 lbs lean ground beef
- 1 pkg brown gravy mix
- 1 scant cup cold water
- 2 large eggs, beaten

Add the stuffing mix to a medium sized mixing bowl. Stir in the hot water and let the mixture 'rest' for 5 minutes. Stir again, and set aside.

To a large mixing bowl, add the ground beef, gravy mix, cold water, and egg. Using your hands, squish and knead all of the ingredients together until evenly combined.

Stir in the stuffing mix until evenly combined.

Spray a bundt pan with non stick cooking spray. Spoon the meatloaf mixture into the prepared pan. Using your hands, or a spatula, press the meat down into a firm, even layer.

Bake the meatloaf at 350 degrees for 45-55 minutes, or until no longer pink inside.

Let the meatloaf rest, away from heat, for 5 full minutes. Carefully turn the meatloaf out onto a plate, serving tray, or cutting board.

Slice, and serve with mashed potatoes and your favorite brown gravy.

When you say a package of Stovetop, do you mean the entire box, because I thought it comes with 2 packets inside?
The boxes I buy only have one in them. So yes, the box.
Thanks for the clarification. I just picked up store brands chicken stuffing equivalent, low sodium Brown gravy packet. Used a split of beef and pork because that was on hand. Used 5 mini loaf pans set up with a probe thermometer for 160Β°, because I don’t have a bundt pan, though I may have to get one because the crunchy bits are tasty. Served with mashed potatoes from scratch, and frozen sweet corn. Thanks for the recipe.

Can I use a regular meatloaf pan because I don’t have a bundt pan and would I have to change anything like the temperatures? I’ve done a similar meatloaf with the stuffing mix that I found on the Kraft website.
Of course! You don’t need to change the temp, but it may need to cook longer for the center to be done.
I made this recipe with lean ground turkey. I donβt have a bundt pan so I used a square glass Pyrex dish. Excellent dish. Simple to make. This was a family pleaser because the grandkids loved it.
So glad the whole family enjoyed it Jocelyn! The bundt pan is mostly for presentation purposes, and to give it a fun little twist. A dish like you used or a meatloaf pan will also work.

Hi! Im 100% Italian and meatloaf was never a frequently made dish. Im going to give ut a try for dinner tonight. Being Italuan, I learned to add grated cheese in most dishes to avoid a bland taste. The last meatloaf I made tasted like a giant meatball! I noticed there was no salt in the recipe. Im assuming the stuffing and gravy mix add enough salt? Thanks so much for your comments. Francesca
You’re correct, Francesca! There’s more than enough sodium in the stuffing and gravy mix. Meatloaf’s such a tricky thing when it comes to finding the right flavor profile. Grated cheese sounds like a super yummy addition!
