Pierogi Lasagna
Ingredients
- 12 cooked lasagna noodles
- 2 cups cottage cheese
- 2 eggs
- 4 green onions thinly sliced
- 1/2 tsp garlic powder
- 2 cups grated cheddar cheese divided
- 3-4 cups mashed potatoes
- 6-8 slices of bacon cooked crisp & crumbled + extra for topping
- 1 cup diced or chopped, ham + extra for topping
- 1 onion chopped sauteed until just beginning to caramelize
- 8 slices bacon fried crisp and crumbled
Instructions
- Mix together the cottage cheese, egg and green onion, stirring until evenly combined.
- In another bowl, mix together 1 cup of cheddar cheese, mashed potatoes, garlic powder, bacon, ham, & sauteed onion.
- Line the bottom of a greased 9 x 13″ baking dish with 4 of the lasagna noodles.
- Spread the cottage cheese mixture out evenly over the noodles.
- Add 4 additional noodles and cover evenly with the potato mixture.
- Repeat.
- Top with remaining 4 noodles, remaining cheese and extra crumbled bacon and extra chopped ham.
- Bake at 350 degrees for 30 minutes.
- Serve warm with sour cream, if desired.

I think the noodle ratio is off – it should be 3 per layer vs 4 or you run out … and garlic vs. onion powder in the directions. Also, it says to add chopped ham on top but you didn’t downsize the portion in the mixing…

Thanks for the heads up! I edited the recipe to fix the errors, but it did say ‘extra’ ham/bacon in the instructions. I noted it in the ingredients list to prevent any future confusion 🙂

I’m a bit confused. Step 6 just says repeat. Does that mean repeat steps 3, 4 & 5? That would mean you’d need 20 lasagna noodles. And you’d need to only use half of each mixture in steps 4 and 5 right? I don’t mean to sound super critical, I’m just not sure if I’m misunderstanding and I don’t want to mess it up. It sounds amazing!

I didn’t add ham. Thought it could use more garlic and salt but it was tasty and easier than making real perogies
