{One Pot Wonder} Jambalaya Pasta

My family is spoiled. Like really spoiled. They freak out if I say I’m not cooking dinner. Like tonight I had to run errands, pick up and chauffeur sons around, and then take the husband’s car in for an oil change. I was pooped. Dinner hadn’t even crossed my mind. Somebody else could step up to the plate tonight.

Behold my surprise when tonight my husband cooked dinner– and the some. I walked in the door and got acclimated. My husband asked me to grab a pen and paper. He told me not to touch a thing. He’d defrosted the freezer, pulled everything out of it, and as he organized it all just called out the contents for me to include on my list. Did I mention grocery day is tomorrow? Usually this freezer inventory falls to one of my teens. They cry and moan like they’re dying, or like they’re being stretched on the rack!

I can’t tell you what a relief this was to me. But you can probably guess how it helped my grocery budget! Something I noticed? Our shrimp gets held hostage over half the year. I cash in on this stuff when it’s on sale. Usually in the Summer. I rack up a shrimp stack. It rarely gets used in the cold weather months though. I could give you a thousand grill recipes, or even salad recipes for Summer– but colder months it seems like I got nothin’. Nothing for my shirimps at least. Those poor little frozen friends.

This {One Pot Wonder} Jambalaya Pasta is creamy comfort food at it’s finest. Studded with seasoned shrimp, Andoullie sausage, and chunks of chicken– it is the ultimate cold weather comfort food. The addition of some chopped veggies, pasta, and a few choice seasonings and you’ve got a quick and easy meal on your hands that’s as seasoned as it is sensational.

Ingredients
  1. 2 tbsp oil
  2. 1 lb chicken, diced
  3. 1 red, yellow, or orange bell pepper, diced
  4. 1 onion, diced
  5. 1 lb andoullie smoked sausage, thinly sliced
  6. 4 1/2 cups chicken broth
  7. 1 1/2 cups tomato sauce
  8. 1 can diced tomatoes with green chilies
  9. 1-2 tbsp Cajun seasoning
  10. 1 tbsp garlic powder
  11. 1 tbsp smoked paprika
  12. 1 tbsp onion powder
  13. salt and pepper, to taste
  14. 1 lb liguine noodles
  15. 1 lb shrimp, uncooked, peeled, deveined
  16. fresh, or dried, cilantro leaves (optional)j
Instructions
  1. In a a dutch oven, heat the oil over medium heat. Add the chicken and cook until the outside's seared. Add in the rest of the ingredients, except for the shrimp, and stir to combine.
  2. Bring the mixture to a boil, then reduce the heat until the mixture's simmering. Add in the shrimp and continue simmering, stirring often, for about 20 minutes- or until noodles are al dente.
  3. Ladle the jambalaya into bowls and sprinkle with fresh (or dried) cilantro before serving.
